Glycation

Glycation is something most people have never heard of, but it's real and is one of the least talked about causes of skin aging.

When sugar circulates in your bloodstream, it can attach to collagen and elastin, the proteins that keep skin firm and bouncy. This bonding forms Advanced Glycation End-products, or "AGEs". Once they form, they're stable and largely irreversible.

AGE-damaged collagen becomes stiff and brittle instead of springy.Over time, that shows up as sagging, dullness, and fine lines, the kind of aging that feels like it "just happened" but was actually building for years.

High-heat cooking methods like grilling, frying, and roasting can create AGEs directly in food too, adding to your body's total load on top of whatever sugar you eat.

Research on skin glycation points to it as one of the fundamental drivers of intrinsic skin aging, and clinical work has shown that more stable blood sugar control over several months can measurably reduce glycated collagen formation.

Ok — I know what you might be thinking — but wait a second before you get all gloom and doom and act like you'll never be able to have a piece of cake or your favorite bbq again. I want to be really clear: THIS IS NOT BAD NEWS! One of the biggest drivers of intrinsic aging (meaning internal, not from the external environment) is something you CAN CONTROL!

The fix isn't zero sugar. It’s less sugar and steadier blood sugar, which practically speaking looks like not waiting too long between meals, having protein, fat and fiber either before or with carbs, and moving after you eat.

Steadier blood sugar won't stop glycation, that's a normal process in the body, but it can meaningfully slow how fast it happens, which means more of your collagen stays springy for longer.
